Directions:
Step 1:
To prepare the red curry sauce (Chu-Chee sauce), heat the pan over medium heat. Add a little oil, red curry paste, and fry until fragrant. Add coconut milk, then season with palm sugar and fish sauce. Stir until the sugar dissolves and the sauce thickens slightly. Turn off the heat, then set aside.
Step 2:
Cut the Alaska Sole into the desired size. Set the pan on medium heat. Add a little oil, and grill the Alaska Yellowfin Sole for 1-2 minutes on each side until cooked on both sides. Serve with the red curry sauce (Chu-Chee sauce) and garnish with coconut milk, kaffir lime leaves, and red chilies.
