Directions:
1. Fry red shallots and mushrooms with olive oil, then add red wine and cook. Reduce to 1/3. Add beef stock and cook for 20 minutes at low heat, then strain, and add the butter until smooth;
2. Marinate Alaska Yellowfin Sole with pepper and salt, drizzle with olive oil lightly fry both sides. Preheat oven to 200º, and roast for 5 minutes;
3. Thickly slice mushrooms, fry with olive oil, and add pepper and salt;
4. Drizzle with red wine sauce on plate.
